Celebrity chef Charles Mattocks, aka the "Poor Chef", is proud to introduce his newest creation, the Charles Bar. The Charles Bar is unique in that it offers chocolate lovers a premium Belgian chocolate indulgence that's sugar free, gluten free, low in net carbs and guaranteed to be some of the best chocolate you've ever tasted, bar none.


A diabeThe Charles Bar-verttic himself, it was important for Charles to find a premium quality chocolate that was diabetic friendly and yet possessed all the desirable attributes of fine chocolate- rich robust flavor, creamy texture, pleasing mouth feel and no unpleasant aftertaste. After sampling many of the sugar free chocolate products widely available in stores and finding none that measured up to his standard, he didn't know if it would be possible.

Then one day he remembered eating a really good sugar free Belgian chocolate bar while living in California. With a little effort, he found the company that made the sugar free chocolate he remembered- Amber Lyn. Charles approached the Southern Utah company well known for its premium sugar free and no sugar added chocolate confections. It was to be a match made in sugar free heaven.

Working together, the chocolatiers at Amber Lyn and Charles created a blend of imported Belgian chocolate with healthy natural ingredients including coconut oil, and a unique melt-in-your-mouth truffle like texture. The new bar met all of Charles' demanding requirements. In Charles' words, "There isn't anything else quite like the Charles Bar. The Coconut oil in the Charles Bar contains lauric acid, capric acid and caprylic acid. These possess properties that are antimicrobial, antioxidant, antifungal, antibacterial and soothing. Coconut oil has been found useful in stress relief, maintaining cholesterol levels, weight loss, increased immunity, proper digestion and metabolism, diabetes, heart diseases, high blood pressure, and bone strength.

A desperate search for a healthy but great tasting chocolate led to the birth of Amber Lyn Chocolates in 1999 and it all started with a retired cop.

Lyman Peterson was a Utah highway patrolman who spent a career busting DUI’s, admonishing speeders and helping damsels in distress change flat tires. In an earlier life, he’d been a home-based chocolatier and loved making chocolate everythings for friends, family and a few customers. After patrolling the highways and byways of the Wild West for 30 years and putting on as many pounds, he retired and searched for low-carb chocolate that tasted like real chocolate. Most of what he found was just awful and he couldn’t find anything to satisfy his craving for good tasting, high quality chocolate that wouldn’t bust his low-carb diet.

nikki_julie_2009Our 13 year old daughter Nikki Tyler DeFruscio was diagnosed with Juvenile Diabetes on June 19, 2000 at the age of 2. This date will be planted in our minds forever. You see that's the day that our lives and Nikki Tyler's life changed forever.

The best way to describe our life with diabetes would be one big roller coaster. We were constantly chasing highs and lows, forever trying to figure out when the insulin would peak and always trying to predict what the unpredictable Nikki Tyler would want to eat! As most who have small children would agree this was not an easy task. Meals became a battleground where we knew that we had to get Nikki to eat something (often we would have to settle for cheetos) because the insulin was going to peak and she would get to low and cheetos were the only thing that she would eat. Our lives were on hold and everything revolved around handling the high or low of the moment.
